JCRC retreat
met roomie at 3pm to chill out before we went for the JCRC retreat.. roomie tot that mirama hotel was near PS so we decided to go PS to chill before the dinner.. went to cafe cartel for a drink cum htht session and did some shopping.. but we realised that mirama was located at havelock road which is near clarke quay.. so i got some help from vincent for the directions.. we should have listened to him to get a bus from YMCA.. initially we tot tt there was the bus opp park mall.. but to our disappointment, there isnt n so we had to walk all the way back to YMCA..
had our last JCRC dinner at mirama hotel.. it was a japanese buffet.. thanks roomie and hw for the treat =)we had a whole VIP room to ourselves and we had an attached waitress and chef to prepare our orders for us... i think the waitress had a tiring 2 hours serving the 12 of us.. hahaha.. but we had a great time joking around and talking rubbish.. it seems like it is the first time that we do not have to talk about JCRC stuff and just plainly enjoying the company of each other.. =)

ok.. this is the recipe for the cheesecake i made.. (by request of andrew.. hahhah)

eh i think can put less lemon cos mine like turn out quite sour... hhahah
250gms of digestive biscuits
1 teaspoon of grated lemon rind
1 tablespoon lemon juice
75 gms of melted butter
For the filling
2 teaspoon gelatine
2 tablespoon water
250gms of pot cream cheese
250gms of pot sour cream (can replace with yogurt)
1/2 cup of sugar
2 tablespoon of lemon juice
1 teaspoon of lemon rind
1 teaspoon of vanilla essence
INSTRUCTIONS
The biscuit base
1. Crush the biscuits as fine as you can
2. In a bowl, combine the crushed biscuit crumbs, lemon rind, juice and butter
3. In a 20-cm spring-form tin, line the sides with the biscuit mixture
4. Put in the fridge
The filling
1. In a bowl, combine gelatine and water
2. Leave it in the bowl for 10 mins. It will swell
3. Beat the cream cheese until it is soft
4. Add and beat sour cream
5. Add the sugar, lemon juice, rind and vanilla essence
6. Beat the mixture until the sugar has dissolved
7. Dissolve the gelatine over water
8. Add to the cheese mixture
The final stage
1. Pour the filling into the biscuit into the biscuit base
2. Put in the fridge for half and hour and it's ready to be served =)
